Work the dough by hand or with a stand mixer using a medium-low speed hook.
Combine both flours in a bowl. Crumble the brewer’s yeast and add some water at 25°C.
Mix with a wooden spoon, gradually adding water. After adding half the water, mix in the salt.
Continue to add the remaining water and mix until the dough is homogeneous. Use your hands if needed.
Transfer the dough to a work surface and knead until firm and uniform.
Let the dough rest under a bowl on the work surface for about 10 minutes.
Shape the dough into a ball and let it rise in a warm place for about two hours.
Once risen, roll out the dough on a floured surface with a rolling pin.
Cut the dough into desired-sized pieces.
Prepare a mixture of granulated sugar and cinnamon in a deep dish.
Heat plenty of vegetable oil in a deep frying pan and fry the dough pieces until golden.
Drain the fried dough on paper towels and then coat with the sugar and cinnamon mixture.
