This dish captures the essence of a Sicilian summer with its vibrant flavours and fresh ingredients, promising a sensory experience that is both colourful and aromatic.
Imagine the delicate sweetness of courgettes mingling with the robust flavours of shrimp, all brought together by the warm, golden hue of saffron.
Whether enjoyed under the stars during a summer evening or shared with loved ones at a festive gathering, this pasta dish is a true celebration of Mediterranean cuisine.
Sauté the shrimp in a non-stick frying pan with a drizzle of olive oil until they turn white and firm, approximately 2-3 minutes.
Slice the courgettes into rounds or strips and sauté them in the pan with extra virgin olive oil and chopped shallot.
Bring water to a boil for the pasta.
Combine the sautéed shrimp with the courgettes, adjust with salt, and continue cooking in the pan.
Dissolve the sachet of saffron in a ladle of boiling water and add it to the pan.
Cook the pasta al dente, add it to the sauce, and sauté everything over high heat.
Add the saffron and cook until the water has been absorbed.
Serve the Shrimp, Courgette and Saffron Pasta piping hot for a true celebration of flavours.
