Lamb with Peas: A Simple and Traditional Sicilian Easter Dish

- ✓ 400 g fresh or frozen peas
- ✓ 1 onion
- ✓ A handful of parsley

Lamb with peas is a much-loved Sicilian classic, traditionally prepared at Easter but welcome at the table all spring long. The tender, flavourful lamb marries beautifully with the natural sweetness of the peas, creating a dish that feels as homely as it is celebratory.

Finely slice the onion and soften it in a casserole with a little extra-virgin olive oil.
