Catania onion puffs ('cipolline') are a delight of Sicilian culinary tradition, a small pocket of flavour encapsulating the unmistakable aroma of stewed onions.
Pina Romano, with her experience and passion for cooking, invites us to discover this typical dish of the Catania rosticceria, perfect for a tasty breakfast or a quick lunch.
One bite and you'll be transported to the bustling streets of Catania, where the enticing aroma of onion puffs fills the air, inviting anyone to stop for a delicious break.

👨‍🍳 Preparation

  1. 1

Prepare the dough by placing the flour in a large bowl, add the yeast and a little water to dissolve it. Mix in the other ingredients and knead for ten minutes until you get a smooth mixture.

  2. 2

Let the dough rest for ten minutes, then knead on a floured surface for another ten minutes until the dough is smooth. Allow it to rise in a warm place for about two hours.

  3. 3

Peel and slice the onions, sauté them in a pan with extra virgin olive oil, then add a little tomato sauce, salt, and pepper. Cook on medium heat for twenty minutes.

  4. 4

Roll out the dough and cut it into six squares. In the centre of each square, place onions, tuma cheese, and cooked ham. Seal the squares by bringing the corners to the centre.

  5. 5

Mix an egg with milk and brush the onion puffs. Line a baking tray with parchment paper, place the parcels on it and bake at 200°C for 30 minutes, brushing halfway through cooking.

💡 Tips and Variations

You can substitute tuma cheese with mozzarella if you prefer a milder taste. Add a pinch of oregano to the onions for an extra aromatic touch.

📦 Storage

  • Store in the fridge in an airtight container for up to 2 days.
  • Reheat in a low-temperature oven before serving.
  • Avoid freezing to maintain the best texture.

🍷 Pairing
