Fried eggs with mozzarella are a dish that encapsulates the simplicity and deliciousness of Sicilian cuisine.
This recipe adds a touch of melting mozzarella to classic fried eggs, creating a quick yet flavourful second course.
The mozzarella, with its melting texture, blends with the egg whites into a flavourful balance that captivates both adults and children.
Ideal for a Sunday brunch or an informal dinner, this dish pays homage to the Sicilian culinary tradition, where eggs often take centre stage in numerous recipes.
Serving them in terracotta dishes makes the presentation even more scenic and appealing, perfect for impressing your guests with simplicity.
Grease four terracotta dishes with butter.
Distribute the sliced mozzarella in the dishes, seasoning with salt and pepper.
Break two eggs into each dish over the mozzarella.
Bake at 200°C for about 15 minutes, until the egg whites set and the mozzarella melts.
Serve the fried eggs with mozzarella piping hot.
For a more flavourful variation, add slices of fresh tomato or herbs like basil or oregano before baking. You can also substitute the mozzarella with buffalo mozzarella for a more intense taste.
Pair the dish with a glass of Cerasuolo di Vittoria, a Sicilian red wine with a fruity and slightly spicy flavour, served at a temperature of 14-16°C.
