This quiche is a versatile meal, perfect for a relaxed Sunday brunch or as a centrepiece for a celebratory dinner.
Its rich flavours and easy preparation make it an irresistible choice for any season, especially when paired with a fine Sicilian wine.
Boil the potatoes for about 30-40 minutes until tender.
Remove the skins, let them cool, then cut into small cubes. Season with salt, freshly ground black pepper, and a drizzle of Sicilian extra virgin olive oil.
Roll out the puff pastry with parchment paper and place it in a 24 cm pie dish. Fit the edges and pierce the base with a fork.
Spread half of the potatoes over the base, add diced ham, alternate with ricotta cheese, and finish with the remaining potatoes.
Sprinkle with grated Sicilian Pecorino cheese and drizzle with olive oil.
Bake in a preheated convection oven at 180°C for 30-35 minutes.
Slice, serve, and enjoy!
