  2. Now finely chop the onion using a mixer or a knife. Clean the celery stalk, removing the bottom part and the strings, then cut it into small pieces. Chop the parsley and set it aside. Soak the salted capers in warm water to dissolve the salt, then drain them under running water. 
  3. In a large shallow pan, lightly fry a clove of garlic until it turns golden. Be careful not to let it burn. 
  4. Add the minced chili pepper, the celery pieces, and the chopped onion to the pan. Sauté everything over medium heat for about two minutes. Also add the diced cherry tomatoes, the capers, the green olives, and most of the chopped parsley. Let the sauce simmer for another two minutes. Pour in half a glass of white wine and increase the heat until the wine evaporates.
