Roast sausage with wild greens captures the authentic flavours of Sicily.
Join me on a culinary journey through my childhood memories, where the aroma of roasted sausage mingled with the wild scent of wild greens ('qualeḍḍu'), a brassica that grows naturally in the Sicilian countryside.
The slightly bitter taste of the greens perfectly complements the succulence of the sausage, creating a dish that's become a classic at family Sunday lunches.
Ideal for enjoying on autumn evenings, when the warmth of the embers and a good Sicilian wine warm the heart and soul.
Boil the wild greens in plenty of salted water and drain well.
In a large pan, heat the extra virgin olive oil and add the crushed garlic cloves.
Lightly brown the garlic, then add the wild greens and chopped sun-dried tomatoes.
Sauté for about 10 minutes.
Roast the sausage over the coals and serve hot alongside the wild greens.
You can add some chilli for a spicy touch. If you can't find wild greens, you can substitute with turnip tops.
Pair the dish with a glass of Eloro Rosso, a robust and slightly tannic Sicilian wine.
