Clean the cardoons by removing the outer leaves and tougher parts, then cut them into pieces. Cook them in salted water for 15-20 minutes until tender, then drain and cool.
In a pan, melt the butter and add the flour, stirring well to create a roux. Gradually add the milk, stirring continuously with a whisk until the mixture thickens into a cream.
Remove the pan from heat and incorporate the grated Pecorino cheese, stirring until melted.
Add the cardoons to the cheese sauce and mix well. Add the beaten eggs and stir until the mixture is homogeneous. Season with salt, freshly ground black pepper, and a pinch of nutmeg.
Pour the mixture into a greased and floured baking dish.
Bake in a preheated oven at 180°C for 30-35 minutes until the surface is golden and crispy.
Remove from the oven, let it rest for a few minutes, and enjoy.
