Sicilian pastries with ham and mozzarella are a delicious treat rooted in the gastronomy of Catania and Messina.
These rustic triangular pastries, filled with ham and mozzarella, are perfect to enjoy as street food while strolling through the lively streets of Sicily.
The aroma of ham blending with the melting mozzarella makes these pastries irresistible.
Ideal in any season, they reach their peak flavour during the cooler months when comfort food is most appreciated.
Place the flour in a large bowl, make a well, and add the yeast.
Incorporate a little water to dissolve the yeast, then add the rest of the ingredients and knead for ten minutes until you have a smooth mixture.
Let the dough rest for ten minutes, then transfer it to a floured surface and work it for another ten minutes until smooth and even.
Place the dough in a floured bowl and let it rise in a warm place for about two hours, until doubled in size.
Roll out the butter between two sheets of baking paper with a rolling pin until you get a thin sheet and leave it in the fridge for half an hour.
Take the dough, roll it into a rectangle, place the butter in the centre and fold it like a wallet. Repeat the operation two more times and refrigerate for half an hour.
Roll out the dough into rectangles of 30x55 cm and cut into squares.
Fill with diced cooked ham and mozzarella, then fold into triangles.
Cover with cling film and let rise for an hour.
Brush with egg yolk and milk, seal the edges with a fork.
Bake in a fan oven at 180°C for about 15 minutes. Allow to cool for a couple of minutes and serve.
For a vegetarian version, replace the cooked ham with a mix of grilled vegetables. To add an extra touch, incorporate a bit of tomato sauce in the filling.
Pair the pastries with a glass of Cerasuolo di Vittoria, a Sicilian wine with a harmonious and structured flavour.
