Sicilian Pastries with Ham and Mozzarella: A Classic from Catania

- ✓ 500 g of plain flour
- ✓ 500 g of semolina flour
- ✓ 700 ml of water
- ✓ 100 g of lard
- ✓ 50 g of sugar
- ✓ 30 g of salt
- ✓ half a sachet of dried brewer's yeast
- ✓ 200 g of cooked ham
- ✓ 200 g of firm mozzarella cheese

Incorporate a little water to dissolve the yeast, then add the rest of the ingredients and knead for ten minutes until you have a smooth mixture.

Let the dough rest for ten minutes, then transfer it to a floured surface and work it for another ten minutes until smooth and even.

Place the dough in a floured bowl and let it rise in a warm place for about two hours, until doubled in size.

Roll out the butter between two sheets of baking paper with a rolling pin until you get a thin sheet and leave it in the fridge for half an hour.

Take the dough, roll it into a rectangle, place the butter in the centre and fold it like a wallet. Repeat the operation two more times and refrigerate for half an hour.

Roll out the dough into rectangles of 30x55 cm and cut into squares.

Fill with diced cooked ham and mozzarella, then fold into triangles.

Cover with cling film and let rise for an hour.

Brush with egg yolk and milk, seal the edges with a fork.

Bake in a fan oven at 180°C for about 15 minutes. Allow to cool for a couple of minutes and serve.
