- ✓ 500 g plain flour
- ✓ 500 g semolina flour
- ✓ 700 ml water
- ✓ 100 g lard
- ✓ 50 g sugar
- ✓ 30 g salt
- ✓ half a packet of dried yeast
- ✓ tomato sauce
- ✓ black olives (passuluna)
- ✓ oregano
- ✓ 300 g mozzarella
- ✓ extra virgin olive oil

With a thicker base compared to classic pizza, they are topped with tomato sauce, mozzarella, oregano, and black olives.

Mix the two flours in a large bowl, create a well and add the yeast.

Pour in a little water to dissolve the yeast, then add the other ingredients and knead for 10 minutes until smooth.

Let the dough rest for 10 minutes, then work it on a board for another 10 minutes until smooth.

Form balls of about 100 g, place them on a baking paper-covered surface, cover them and let rise in a warm place until doubled in size.

Press the risen balls with your fingers to form discs and let rest for another 30 minutes.

In a bowl, mix the tomato sauce with salt, oregano, and a drizzle of oil.

Cut the mozzarella into pieces and let it drain.

Spread a spoonful of sauce on each dough disc and bake in a preheated oven at 190°C for about 15 minutes.

Add the mozzarella and an olive to each mini pizza and bake until the mozzarella melts.

Serve the mini pizzas with a drizzle of olive oil and a sprinkle of oregano.
