The delicate aroma of rosemary and thyme, paired with the subtle sweetness of juniper berries, envelops the senses, creating a sensory journey that begins long before the first bite.
The tender, lean rabbit meat, beautifully complemented by golden roasted potatoes, offers a delightful balance of textures and flavours that captivate both the young and old.
As you gather around the table, this dish transforms any occasion into a celebration of togetherness and good taste.
Best enjoyed during the cooler months, when its warmth brings comfort, the Roasted Rabbit with Herbs stands as a testament to the simplicity and elegance of Sicilian cooking.
Prepare the vegetable broth.
In a skillet over medium-low heat, sauté a clove of garlic and a sprig of rosemary in extra-virgin olive oil for 2-3 minutes.
Add the rabbit pieces and brown on both sides for 4-5 minutes, seasoning with salt and pepper.
Deglaze with white wine and let it evaporate, then add half of the hot vegetable broth and cook for another 5 minutes.
Remove the garlic, peel and cut the potatoes into pieces.
In a bowl, season the potatoes with rosemary, thyme, salt, pepper, and extra-virgin olive oil. Mix well.
Transfer the potatoes to a large baking dish, add the browned rabbit pieces, remaining broth, herbs, and juniper berries.
Bake in a preheated static oven at 200°C for 40 minutes.
Remove from the oven and serve warm.
For a deeper flavour, marinate the rabbit in white wine, garlic, and herbs for a few hours before cooking. You can also add chopped onions or carrots to the roasting dish for added sweetness.
A delightful glass of Contea di Sclafani Grillo, with its elegant fruity and floral notes, pairs beautifully with the dish. Serve the wine at a temperature between 6°C and 8°C to fully appreciate this flavour combination.
