Stuffed peppers with rice are a dish rooted in Sicilian culinary tradition, offering an explosion of flavours and aromas typical of the island.

    Remove the seeds and membranes from the peppers, wash them and let them dry upside down on a clean tea towel.

    Boil the rice in salted water, drain it al dente, dress it with extra virgin olive oil and let it cool.

    Add half the chopped tomatoes, half the chopped parsley, the egg yolks, and 50 g of pecorino cheese to the rice.

    Season with salt, add black pepper, and mix well.

    Grease a baking dish and arrange the peppers, brushing them with oil and a pinch of salt.

    Fill the peppers with the seasoned rice, then add the remaining tomatoes, parsley, pecorino cheese, and sliced garlic. Cover them with the tops.

    Bake in a preheated static oven at 180°C for an hour, then at 200°C for another 10 minutes.

  • You can freeze the cooked peppers for 2-3 months, wrapping them individually in cling film.
