- ✓ 500 g cherry tomatoes
- ✓ 300 g rice
- ✓ 70 g grated Sicilian pecorino cheese
- ✓ 2 egg yolks
- ✓ a bunch of parsley
- ✓ a clove of garlic
- ✓ extra virgin olive oil
- ✓ salt
- ✓ freshly ground black pepper

Remove the seeds and membranes from the peppers, wash them and let them dry upside down on a clean tea towel.

Boil the rice in salted water, drain it al dente, dress it with extra virgin olive oil and let it cool.

Add half the chopped tomatoes, half the chopped parsley, the egg yolks, and 50 g of pecorino cheese to the rice.

Season with salt, add black pepper, and mix well.

Grease a baking dish and arrange the peppers, brushing them with oil and a pinch of salt.

Fill the peppers with the seasoned rice, then add the remaining tomatoes, parsley, pecorino cheese, and sliced garlic. Cover them with the tops.

Bake in a preheated static oven at 180°C for an hour, then at 200°C for another 10 minutes.

For a spicier version, add a pinch of chilli to the filling. You can replace the pecorino cheese with parmesan for a milder taste.

- • Store in the fridge for up to 2-3 days in an airtight container.
- • Reheat in the oven at 180°C for 10-15 minutes before serving.
- • You can freeze the cooked peppers for 2-3 months, wrapping them individually in cling film.

Pair the stuffed peppers with a glass of Cerasuolo di Vittoria, served at 14-16 degrees, to enhance the dish's flavours.
